Located in Hong Kong’s historic Wanchai district, Le Bistro Winebeast is the sister restaurant of Winebeast wine shop and the place for eco-friendly and biodynamic wine pairings with seasonal French dishes.  With a cozy and laidback atmosphere where you can learn plenty about eco-friendly wines from seasoned sommelier Christina Carranco Ducroquet, time seems to fly by whenever we come by for lunch or dinner.
 
Chef Johan Ducroquet’s dishes are inspired by his vast experience working in France, Spain and South America with a modern Asian twist.  His creative menu changes every four to six weeks, with a delicious tasting menu paired with perfect wines that gives you a taste of his best offerings. 
 
We start with the Sea Bass Ravioli with cream of artichoke, confit lemon, coriander and emulsion of chorizo and lemongrass.  Refreshing and light, the sauce is perfect for dipping French bread into and well paired with the equally refreshing Cotes-du-Rhone Domaine de la Janasse ‘Tradition’ 2013. With the freshness of the Roussane grape with the depth of the white Grenache and Macabeu grapes this melted well with the smooth and silky texture of the sea bass.  Pan-Seared Snails with parsley and wasabi cream and mascarpone, with fried garlic and topped with radish has a nice spicy Oriental touch and is excellent with the Cotes-du-Jura Domaine Andre & Mirelle Tissot ‘Les Argiles du Lias’ 2012 from the Jurassic Lias soil.  Its refined and crisp texture is complemented by its spicy taste, leaving a mellow, zesty and long finish.  For the main, we had the tender and juicy Iberico Pluma with red fruit jus, roasted pear, and peach and ginger condiment.  The Spanish origin Montsant L’Altre de Can Blau 2010 well balances out the dish with its rich black cherry aromas and hints of chocolate.  Not to be missed is the Caramelized Banana with caramel mousse and coconut ice cream.  Ice cream is made fresh, with light flavours and no sugar.  The light dessert makes the savoury blend of ripe peach, apricot and honeysuckle in the Sauternes Rousset-Peyraguey ‘Delicatesse d’Or’ 2003 stand out even more.
